Steak & Blue Cheese Crostinis

- Baking sheet
- Foil
- Cooling rack (or other meat rack)
- Bread knife
- Pastry brush
Ingredients
- 1 lb flank steak
- 2 tbsp olive oil
- Salt and pepper
- 1 French baguette
- 1/2 cup cherry jam
- 1 cup arugula
- ¼ cup crème fraiche
- 1 tbsp snipped chives
Instructions
- Drizzle flank steak with olive oil and season with salt and pepper. Preheat your broiler and let the meat sit as it heats up.
- Line a baking sheet with foil and place a rack on top. Place flank steak on rack and broil for 5-7 minutes on each side, until cooked to your desired temperature. Let sit.
- While meat is cooking, slice your baguette into 1/4 inch slices. Brush both sides of each slice with olive oil and sprinkle with salt. Place on a baking sheet.
- Broil in the oven for 2-3 minutes or until golden. Flip and repeat with the other side.
- Assemble crostini: cherry jam, arugula, flank steak, creme fraiche, and chives.
